Shu Lien is the better fighter and they made that pretty clear but Jen always had either help or something to give her an advantage. When Jen was about to lose in hand to hand combat Lo helped her and when they battled with weapons Jen had the OP sword. Without the Sword of Destiny Jen would've clearly lost. It's just that the sword could cut through any weapon Shu Lien used.

As for your question of what the fighting style is - if you mean the visual/cinematic style they use that makes them look like they are flying, that is called Wire Fu (yes, like a combination of "wire work" and "kung fu". As far as the actual martial arts being used here, a lot of it draws from Wudang Sword fighting techniques, which ARE relatively more based in mysticism than typical Shaolin style Chinese martial arts styles.
