Spending the night with Soo-ah would have have created an obligation and commitment he wasn't ready to make. His primary motivation is revenge, not killing the guy who killed his father, but beating the chaebol family at their own game. Revenge is a much bigger motivator in Korean society than it is in America or most of Europe. It's more like the way things work in Sicily, where blood feuds are common. Korea is a country made up of clans based on family connections, so offenses against a family are taken very seriously and revenge is expected, unless a settlement with appropriate compensation and an apology is arranged. The Korean justice system takes this into account which is why he only got a 3 year sentence despite having no remorse and offering no apology. In Western countries he would have received a much longer prison sentence ranging from 20 years to life in prison.

Yes a lot happens in this episode. Well it's still a kdrama in conservative Korea so not surprised he turned down Soo-ah's offer but the way I look at it maybe he thought he wouldn't have the will to continue with his plan if he crossed that line with her, it would've been harder to leave her to board that ship he may have wanted to stay then. I think he is very determined to see his plan through. The show is very good at making you sympathize for characters and also show how things change. There is a character introduced I don't like at first and another I do, later over time they reverse positions for me and I end up liking the character I didn't like previously while very much disliking the character I thought I liked but that's me, some people feel differently.
