Listening to this now because I just recently discovered this podcast, and I remember my child self being annoyed that JKR had invented a really cool magical creature (the lethifold, basically a manta ray thing that camouflages as an invisibility cloak and crawls over its victim's face and strangles them, then eats them) and then never used it in any of the books. I was so convinced that Harry would face a lethifold, because why else put it in the Fantastic Beasts book? Hearing you talk about that silly little tie-in book suddenly brought these memories back to life.
