Different teams, different priorities. I could say the same with how MAPPA treated Chainsaw Man and this season's Hell's Paradise for example. There's also the fact that Nier's in-game CG models weren't using high-quality textures. It works for the game since the lighting does a massive help, but for the anime it's very noticeable when compared to the detailed backgrounds and such.
