Remember—it’s not only that they’ve animated her differently but that the last time we saw Ashoka in The Clone Wars she was only 17—now, she’s around 32. Yes, she beat Maul at 17. She’s a badass. (Using the light side mind you). In The Mandalorian she’s around 45. In the Ashoka show she’s around 47.
