But a year ago Jin did a cool cooking video with one of the chefs around the table we just watched (Chef Lee Yeon Bok). Kimchi jigae or kimchi stew is one thing you can make with kimchi. So, Jimin was saying he really likes his mom's kimchi and kimchi stew. You can also eat kimchi the day you make it (fresh kimchi) because it hasn't fermented yet. I'm told fresh kimchi has a different flavor profile and texture to the fermented one.

From what I understand, fresh kimchi is essentially the unfermented version of what you think of as kimchi. I would assume it doesn’t get the tang that the fermented kimchi gets.
