This is just a bad season of television, super well made, super well acted, but just god awfully boring.

David is, of course, a World Class chef but I haven’t been led to believe that he’s necessarily better than Chef Terry or any of Carmy’s other mentors (as a chef or a mentor). I chose to believe that there’s little to no added value in the abusive style he practices. Lots of people use their skill to get away with their cruelty, and even to justify it. But Carmy has internalized that so much and he’s trying to fight those bad habits David instilled in him. But I think he also encourages them. He’s internalized that his gf and the happiness she brought are bad for him and that the intensity and all the ills that it brings are, in the end, a net positive.

Agreed... Carmy saw that the review was out, he saw a bunch of missed calls from Cicero and Computer, and he jumped to the conclusion that it must have been a bad review because of all the missed calls.

Yes, the chef at the beginning teaching Carmy how to truss a chicken is a real chef. It's Thomas Keller, the owner and executive chef of The French Laundry. He also owns a restaurant in NYC called Per Se, and his claim to fame is that he is the only chef in America who owns TWO Michelin 3-star restaurants (out of 13 in the whole country). He also owns a third restaurant in Miami called The Surf Club, which has 1 Michelin star. Most of the people from the funeral dinner were real chefs and restaurant industry people playing themselves. The pastry chef Malcolm Livingston II (the haircut guy) was the inspiration for Marcus' character.

Carmy remembers the dozens of people who helped and nurtured him, and treated him with kindness. But he can't stop focusing on the one guy who was an asshole to him. In a perfect world, he'd develop some perspective and let the positive memories drown out the bad experience when it starts to overwhelm him.

This episode absolutely me geek the fuck out because all the best chefs in the US were in this episode, with Daddy Thomas Keller, owner and CNC of The French Laundry at the very beginning. Your enjoyment of this episode really depends on if you know these faces and I fucking loved this episode.
