Yoda tells Luke he's the last of the Jedi because Yoda is the last of the council. The Jedi are an organization so while people are alive that trained under the Jedi, they are not actively a part of the organization. TLDR; The Jedi are the Free Masons. Or maybe they're the Knights Templar? Yeah, that sounds cooler, that one.
