It's the fact huell pick pocketed him before he went undercover. He knows wants been playing him from the start. Even if Brock wasn't poisoned by the ricin he realized wealthy was playing him then as well. He knows walt is too smart to have used the ricin to poison Brock and having the poison be something else cleared walt. I also think part of it was Jesse's mental state, he thought of that possibility again but knowing walt has always been working him and ran with it. Knowing if he went after Saul he'd give up the truth real quick.

Brock wasn't poisoned with ricin, jesse knows that, he was told that it was just some random plant that kids commonly eat fruit off of not knowing itll make them sick. I don't know how he would make the leap that walt would risk having it lifted, bring it back to his house and then put it in his vacuum, or even if he remade it nobody died from it. Not sure why they made this the reason why he snaps
