I mean, strictly speaking, all of that character development came _later_ for Gilgamesh.
Fate/Stay Night is what came first. This IS the original Gilgamesh, this is the first appearance of him in a Fate work.

So, Berserker and Illya are done... it's a shame, really. SUch a sad ending. To give context to how Illya was able to have all those visions of her mother corrupting her thoughts, Illya is altered by her family to be the next grail, much like her mother was. She has an inherent link to the grail itself all the way in Fuyuki Japan, and considering what's in the grail that Kiritsugu saw still exists... well... it has Illya literally on speed dial. Poor girl.

It might partly have to do with the fact that he was affected somewhat by the grail's corruption when it incarnated him. But also, it's because he hates this version of humanity. He sees humanity being wasteful and useless, whereas back in his day, everyone, from nobility to slaves, served a purpose in making humanity better and stronger. Thus why he wants the grail to purge humanity so that it can start over.

A bit of trivia, Gilgamesh's chains that he uses on Hercules and what he used on Rider at the end of Fate Zero are a noble phantasm that become stronger the more divine (godlike) their target is. They're from the legend of Gilgamesh, and are meant to counter gods. So Hercules being a half god actually works against him in this case as it just makes the chains stronger.

I will say while Gilgamesh is one of my favorite characters, I don’t like this version of him. The once smug, honorable king now just acts like a stereotypical sociopath. It’s just not the same :(

While Hercules is half-god in his story, so is Gilgamesh, which is what led him to mention that in their fight.
The difference is that while Hercules tried to work beneath and with the gods, Gilgamesh was moving towards goals beyond the gods. Hercules was a half-god aspiring towards godhood, while Gilgamesh was a half-god aspiring to be something different from both gods and men.

It really fits that Hercules was defending and taking care of Illya for his own reasons. In his story he is driven mad by Hera and kills his own wife and children. So him wanting to protect Illya makes all kinds of sense and it fits with her need of a father figure.

Yup, we really see how much of a threat Gilgamesh is even more than we saw in Zero. Dude was able to dispatch Heracles with relative ease. Gilgamesh without a doubt is the strongest servant. But what helps Gilgamesh against Heracles is that he indeed had the means to hold him back and of course, the sheer range. It's hard to believe that Berserker is the second one out here. But also ironic considering Berserker and Rider were classes that lasted until near the end in the last Grail War. Rider got a shitty master and was replaced by Gilgamesh and then Berserker was taken out early because of Gilgamesh. Gilgamesh who isn't actually supposed to be in this Grail War btw as he isn't one of the summoned servants as we already have our Archer for this War. So Herc was taken out by an overpowered outsider.
