Luffy realized a few things here: For starters remember that we have three forms of Haki: Armament, Observation, and Conquerors. So before the timeskip when Rayleigh trained Luffy he told him that if you learn armament haki then you can hit the logia devil fruit users (Akainu, Kizaru, Aokiji); Well in this fight so far whenever Luffy used Armament haki he wasn’t able to hit Katakuri unlike everyone else. Luffy was trying to understand why he couldn’t hit Katakuri. Now we know that Katakuri has observation haki so powerful he can see into the future. What has been going on is Katakuri’s Mochi isn’t a Logia devil fruit, it’s a Paramecia devil fruit like Luffy’s Rubber. So essentially Katakuri has been using the future sight ability to instantly dodge Luffy’s attacks. Which is why Luffy hasn’t been able to hit him. Katakuri needs to remain calm when seeing into the future. So what happened in this episode is that after everyone saw Katakuri’s face he lost his cool and wasn’t able to control his observation haki and spam his future sighting. 1. Luffy finally realizes Katakuri needs to remain calm for his future sight to work. 2. MEANWHILE, Luffy has been adjusting to Katakuri’s speed and training his observation haki. Luffy is slowly unconsciously learning how to see the future himself like Katakuri!! Sorry if the message is long, hope you found this helpful 😁

I think maybe he was thrown off his game because Luffy saw his mouth and since then Katakuri has been more angry and aggressive. His emotions are out of whack which is keeping him from seeing into the future at least thats my theory.
