Just a drinks nerd weighing in that I believe Daisy was using Demerara sugar, it’s a cane sugar that still has some golden brown color (it’s named for the Demerara river which has a brownish hue) basically, it’s Sugar in the Raw. Anyways, totally a kosher way to make a mojito and a bit richer than a white sugar one. It is more granulated than the soft dark or light brown sugar we use for baking in the states and less molasses-y. Only sharing as I know Ben is a fellow eater- if you find Demerara pick some up, it’s really so delicious and versatile, I think it’s tremendous in a simple dark liquor drink like a sazerac.

Having bartended at a legendary local blues bar in Indianapolis during many, many Indy car and nascar events, I can safely say that nascar folks are not only low rent but proud to shout it to anyone willing to try to decipher that much slurred twang. Once a year many of my otherwise-normal and progressive friends would suddenly morph into walking miller lite receptacles with nary a nipple pastie as they fell off the top of a camper trying to do a keg stand on live television.
