As Renee mentioned in the comment above, Lin wrote this song first in Spanish. He said it is the first song he's ever written completely in Spanish first before doing a translation to English. He then did a second one all in Spanish first for this movie as well, "Colombia, Mi Encanto." The movie has been released in 46 languages total, if I recall correctly, and Lin said that this song is done for the scene in the movie in Spanish in all versions. Apparently, Disney has never done that before. At least in the English version of the film, they play the English version of the song during the credits.

To your question about language, Lin wrote the original song in Spanish. When they wanted an English version he tweaked the translation to English so it would still be poetic :-)
