In all honesty, I am pretty sure that Rapunzel wasn't the name that the king and queen gave their daughter. I don't think that Gothel even bothered to find out what they had named her. I think that she went from confirming that the girl's golden hair (which was unlike the coloration of either of her parents) was a sign that she inherited the powers of the flower, to deciding to stealing her away the way they "stole" her flower. Also it so happens that Flynn didn't tell her that the lantern ceremony was for the princess' birthday, and just as likely that he didn't know himself. After all, he literally called it "that lantern thing they do for the princess." So it's not that surprising that they didn't put the pieces together earlier as there was a few missing.
