They didn't hire an older actor because, just like they did throughout the episode, they were paying homage to the way TV productions did things back in the old days - such as "aging up" younger actors/actresses by simply slapping wrinkles on their faces and putting gray through their hair. I thought it was a fun touch. Fun fact: The actor who played the younger Gideon Malick revealed that he channeled Donald Trump Jnr for his performance in this episode. Right down to the sleazebag stubble.
