It’s true that the creators of the show didn’t know how they wanted to end the season and then while filming an earlier episode, David Schwimmer accidentally said Rachel instead of Emily and that’s when they thought that is the way to end it. I remember watching this live and had to wait for months until season 5 I think their thought process was that even though Ross loves Emily, subconsciously he always envisioned himself marrying Rachel and so it may have been an automatic response from him.
