It's quite an experience for a logical science oriented person to experience a completely impossible magical change.
Especially to a sexy creature that shouldn't even exist.
But since Lilian is such a petty bitchy witch, she's more than happy to introduce everyone to the wonders of permanently life changing magic for any minor reason.
Besides I think the new look suits Symmetra perfectly, really puts her best assets in a nice view.

She's in a perfect position to give everyone around a show of that new form, constantly showing her best side. Having those hard light claws is a nice constnt reminder of her past.
