Unaware that siurdough was oopular in UK. Originated in SF during the Gold Rush. One bakery, Boudins, has been making sourdough since the mid-1850s, and the starter yeast they use today represents the continuous cloning of yeast sunce 1856 I think. Their bread is qbsolutely unique and wonderful--the best sourdiugh in San Francisco in part because the yeast contains unusual elements forned over 165 years ago. You may buy it on line I believe it would probably be ungodly expensive.
