Don't get me wrong, I love a good noodle right out of the pot. But I also like fixing up my noodles all fancy like. Yes boiling noodles is easy and most anyone can do it but nothing gets my goat more than a soggy noodle. Except for maybe a dry peach.
So... Do you want to take your pasta dishes to 3rd base? This trick makes the noodles extra fun to eat. Seasoned just right with the perfect texture. You will catch us making these at least once a week in our house. And if you prefer to be a little healthier this is great with whole wheat pasta as well.
What you'll need.
Noodles - Any type will work. Our kids love their spaghetti prepared this way.
Garlic Powder - about a tablespoon
Basil - about a tablespoon
Oregano - about a tablespoon
Olive Oil - must be olive oil. the richer the better!
Salt - we typically use kosher salt.
Pepper - about a teaspoon
Measuring cup
Start by boiling your water like you regularly do.
Add salt. I typically use about a palm full.
Once the water boils add your pasta
Set your timer for 1.5-2 minutes shorter than the cooking label suggests.
When time is up check your noodle. You want it to be very firm but not sticky in your teeth.
Using your measuring up, dip out 2 cups of water from the pot before you drain your noodles.
Once your noodle is drained replace your pot with all the noodles back on the stove and add in 1 cup of pasta water.
Bring the water back to a boil. This will be more of a simmer.
Quickly add in Olive Oil, Garlic, Oregano, Basil and Pepper.
Gently mix spices with watery noodles on high heat until the water is cooked out.
Remove from heat and serve up your hot, steamy, delizioso noodles.
