Yuuuuuumm...ok ok I know summer is almost over but peaches are so good right now! And you know it's still warm outside. These are delicious. The kids can't get enough of them. And because they are so easy I have been making them a lot.
The recipe is below. Forgive my lack of exact measurements. With a recipe like this you can use the approximate as a guide to season to taste.
You will need:
For the Peaches
Peaches 2-4
Honey - about 1 Tablespoon
Vanilla - about 1 Teaspoon
Olive Oil - about 1 Tablespoon
Cinnamon - about 1 Teaspoon
Homemade Whipped Cream
Heavy Whipping Cream - 1 1/2 Cups
Maple Syrup - about 1 1/2 Tablespoons
Vanilla - about 1 Teaspoon
Sour Cream - 1/2 Cup
Cut your peaches in half and remove the pit. Put them in a bowl and add honey, vanilla, olive oil and cinnamon. Stir it up so that everything is mixed together. Let these marinate while you make your whipped cream.
Make sure your whipping cream and sour cream are cold for great results. It's best if you can refrigerate your mixing bowl as well. In the bowl add the whipping cream, maple syrup and vanilla. An electric mixer will make this go much faster but you can do like I did and whisk by hand. When you start to get those soft peaks it's time to add the sour cream. Mix until you get stronger peaks and the texture feels right for whipped cream.
Now it's time to go to the grill. Turn it up to medium heat. Start face down with the peaches. They should only take about a minute or two. Then flip. Again for about a minute or two. They are done when they soften up.
Cover in your yummy whipped cream and top with the left-over syrup.
