Chewy, cozy, and perfect for cooler weather—these cookies are made with nutty brown butter, warm cinnamon, and a sweet maple glaze. A comfort cookie to go with a heartbreaking case.

Ingredients

Cookies:

226g (1 cup / 2 sticks) unsalted butter
200g (1 cup, packed) brown sugar
100g (1/2 cup) granulated sugar
2 large eggs
1 tsp vanilla extract
1 tbsp real maple syrup
220g (1 3/4 cups) all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
240g (3 cups) old-fashioned rolled oats
Optional: 90g (3/4 cup) chopped walnuts or pecans

Maple Glaze:

120g (1 cup) powdered sugar
2–3 tbsp maple syrup
1–2 tsp milk (as needed for drizzling)

Instructions

Brown the butter: Melt butter in a saucepan over medium heat. Cook until golden brown and fragrant (about 5–7 minutes). Let cool for 10 minutes.
Mix wet ingredients: Stir browned butter, brown sugar, and granulated sugar in a large bowl. Add eggs, vanilla, and maple syrup. Mix until smooth.
Add dry ingredients: In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Combine with wet mixture. Stir in oats and optional nuts.
Chill dough: Cover and chill dough for at least 30 minutes (or overnight).
Bake: Preheat oven to 175°C / 350°F. Scoop ~2 tbsp portions (about 35g each) onto lined baking sheets. Bake for 10–12 minutes, until edges are set and centers look just underdone. Cool on pan 5 minutes, then transfer to a wire rack.
Glaze: Mix powdered sugar and maple syrup. Add a splash of milk if needed for drizzle consistency. Drizzle over cooled cookies.
