So, the boats due for a clean out.. [Ep. 165]

It's been a good year since we've paid any REAL attention to La Vagabonde. Besides polishing the stainless, scraping the bottom when she gets a little molluscy and maintaining our equipment onboard, she's usually keeps things fairly easy for us. But we are in need of a few installations and we are due for a new coat of antifouling. We decide to sail up the coast to Just Catamarans, a place well known for it's legendary team and fast service.

We now have FANS YOU GUYS (the ones that ventilate the room that is - haha) There is a proper fan, in my room. Looking forward to the haul out in the coming days.

Ingredients

6 Tbsp olive oil

1 medium onion, chopped

3 garlic cloves, minced

2/3 cup fresh parsley

1 1/2 cups of fresh chopped tomato (out 1 medium sized tomato)

1 can crushed tomato

1 cube vegetable stock

1 1/2 white fish fillets of your choice, cut into 2-inch pieces

Medium sized bunch of chopped bok choy

Pinch of dry oregano

Pinch of dry thyme

Tabasco sauce to your liking, roughly about half a teaspoon (we make it more of a squirt, we like it hot!!)

Fresh ground lack pepper

Salt to taste

Method

  1. Heat olive oil in a large thick-bottomed pot over medium-high heat. Add onion and sauté 4 minutes, add the garlic and cook a minute more. Add parsley and stir 2 minutes. Add bok choy after you’ve let the onion and garlic saute for a while.
  2. Once the bok choy is fairly soft, but not completely cooked. Add fresh tomato, canned tomato, tomato paste and cube of veggie stock, and cook for 10 minutes or so giving it a few stirs.
  3. Add fish and simmer until the fish is cooked through and easily flakes apart, about 3 to 5 minutes. Add the oregano and thyme seasoning plus the salt and pepper to taste. Pop into some bowls to serve!
