I think El Mariachi is valuable just as an example of really low-budget filmmaking that led to bigger things. Seeing El Mariachi and then the evolution of Rodriguez's technique with Desperado would be fun. I don't remember Once Upon a Time in Mexico that well, and if it were cut I wouldn't have strong feelings, but it also feels like they might as well. Surely it's as good as Live Free or Die Hard.

Desperado has been included in polls before with the caveat that Daniel has already seen it. I don't know how much value there is in watching the films on either side of it (I know some people swear by El Mariachi, but it's only okay imo and no one ever talks about Once Upon A Time In Mexico for good reason lol).

Hopefully the whole El Mariachi trilogy is on the horizon if they're watching From Dusk Till Dawn. I don't think they've done Sin City either, and they can also throw in Planet Terror and Machete. (Can't say I care much for Machete Kills, though, and I never saw the second Sin City.)
