Advantages: Public release can begin sooner.
Disadvantages: Fighting games are centered around PvP, so expectations for the game are significantly lowered, which is detrimental to gaining supporters.
Has online matching
Pros: Increases expectations, allows you to play against people all over the world instead of just practicing.
Pros: Takes time.
As a supplementary note, the "no online" option is for the time of the demo release, and depending on the support for the project, it may be implemented later. However, please note that there is a possibility that support will not increase for the "no online" demo.
