The Attack Titan can see events from the future however it does appear that Eren is blocking certain holders of the Attack Titan from seeing everything. The Owl didn’t know who Armin & Mikasa were because Eren never allowed him to know, but Owl only knew it was important enough to mention to Grisha because Grisha would one day know who they are. As we saw Grisha took Mikasa in after her family was killed. It led me to believe Eren possibly whispered in Owls ear similarly to how he just did here with Grisha, pushing him to act or say certain things. Owl also told Grisha to keep moving forward which is Eren’s saying, so it leads me to believe Eren has learned to manipulate certain events across history to create the outcome he is seeking. He hasn’t allowed anyone to see the full plan, not even us the viewers, Grisha couldn’t even see if Carla & Eren were going to survive the attack on the walls from the first episode, because it seems Eren needed him to still be driven to find out and to “keep moving forward” and not loathe in his disdain about what he’s done. So we see Grisha go home to see if his family survives and eventually complete the next step which was to pass the Attack Titan & Founding Titan on to little Eren, in the same way Owl did for Grisia. The sad thing is, Eren was the kid Grisha needed in Marley, the child solider who wants to fight injustice and Zeke was the kid Grisha wanted in the walls, he wanted a normal family but as you said, Eren was born a fighter.

Isn’t it crazy watching that scene from the first episode now that you know so much more about everything? The whole show just feels crazy like that when you rewatch it. Thanks for uploading this!
