So the watch thing at the beginning... The watches are fake, which you surmised, so Saul and his mark "stumble" across the guy, and the cash in the wallet was already theirs. The mark gave the cash in the wallet back PLUS $580 of his own in exchange for the watch. So Saul and his buddy are up $580.
