Looks delicious and definitely hot gravy on hot not warm biscuits. The only thing I would change is more gravy, if you can see the biscuits you don’t have enough gravy 😋

Some additional ideas for "American" foods:
Southern Fried Chicken (you have a deep frier)
Toll House cookies
Cowboy Chili (spiced ground meat) sometimes with beans [my preference]
One additional bit of advice: When using fresh, hot chili peppers, remove and discard the seeds. (ALL the seeds) By using just the flesh of the chili pepper you wind up with a flavorful dish which isn't an endurance challenge. Good luck!

Ms. Victoria, per usual you've made a high-end version of "ordinary, every day" food.
Hints: Handle the sticky dough with wet hands and it will stick less. Re-wet your hands before making each biscuit.
Embrace the spices. The dish should be mildly peppery.
Yes, you paint the biscuits with milk to help brown the surface while baking.
You did a great job. Congratulations. (and I'm loving the cowboy hat, it's better than a chef's toque.)

To get good biscuits you really need flour made from soft southern wheat which is likely hard to find there, the best option you might have is to use Italian 00 Flour, which while not perfect is closer to correct than your standard flour.
