New England style clam chowder--the cream soup style--is an old New England tradition. The "bread bowl" thing is a newish invention from San Francisco, largely for tourists and unsurprisingly popularized by a baker of sourdough bread. I was a bit disturbed by the open clams. To quote and/or paraphrase many sources: "Before you start cooking, survey each clam to make sure it’s still alive and kicking. Live clams will be tightly shut. If you spot a clam with a slightly ajar shell, tap it; if it shuts quickly, you’re good to go. If the clam stays open, toss it out." They open as they cook--that is normal. I too would be suspicious of any that don't open. As to what to do with clam shells, in coastal areas of the US, clam and oyster shells are used to pave driveways. This was more common in colonial days when shellfish in US waters were more common than today. As for the crabmeat, I'm not a fan so I wouldn't do it but it's fine if you like it. It makes for more of a "seafood chowder" than purely a "clam" chowder but there are all sorts of chowder which is really a style of soup rather than a specific soup. Personally, I love corn chowder. One question: Do Brits have a thing about celery? You skipped the essential celery in the jambalaya and, while it's less critical, I think some chopped celery along with the onions and bacon is great in chowder. You asked how it looks: Perfect.
