Thanks patron Gary Harvey for sending through your pie recipe, we liked it hot with ice-cream (it's cold in Melbourne).
Just in case anyone else wants to try it, here's Gary's recipe:
"1 1/2 cups sugar 3 T. unsweetened cocoa powder 4 T. unsalted butter, melted 2 large eggs, beaten 3/4 cup evaporated milk 1 t. pure vanilla extract 1/4 t. salt Whipped Cream, for serving Preheat oven to 350 degrees. In a medium bowl, whisk the sugar with the cocoa powder, melted butter, beaten eggs, evaporated milk, vanilla, and salt until smooth. Pour into crust and cover edges with aluminum foil and bake for 35-45 minutes..... the crust recipe is as follows: 2.5c flour 1Tablespoon of sugar 1c ( cold cubed real butter) 1/4c ice water If you are using a food processor add 2 cups of flour and sugar pulse it to or three times to get sugar and flour mixed then add butter and pulse again until it makes pea sized pellets then add rest of the flour and water 1Tablespoon at a time until it makes a ball you can also use a stand mixer!!!! "
