It's like a trust thing in my opinion. If i'm putting my head in a woman's lap it's because I basically trust her completely. Also regarding his witch factor, remember when they called betelguese he ended up taking his sloth witch factor from him so it would make sense he can use the unseen hand. I'm not exactly sure how it works or if he can control at will yet but it's a convenient thing to have! Also ryuzu is the name of all the copies in general but the 4 first copies that arima talked about have their own last name. Bilma was the first of the main copies that subaru met, and then arima was the one that explained about garfield and whatnot, and then shima is the one who has been on gar's side this whole time. I'm not sure if the ryuzu in gar's past was shima or arima but it seems like it would make sense if it was shima since she's helping gar now.
