Well no she wouldn’t be able to live as an ordinary girl. Her fate was always to be king of Britain ever since she pulled the sword of selection so any thoughts and dreams she had to live as a normal country girl was cast away in to oblivion. She took priority to be king due to all the training she did with Merlin. Seeking prosperity for her country and its people to be freed from the dark ages that Britain was going thru. So if she changes that not only will the course of history change drastically it would potentially erase herself which she is trying to aim. Saber feels unworthy to be king, nor worthy to be alive or be free so her goal now is to have someone else take the throne and erase herself completely.

It is possible that a servant can remain in the modern era is they consume the holy grail inner contexts. Also remember that no one expects the three founding families know that the grail is corrupted by Angra. Kiritsugu didn’t knew at first until he was in a simulation created by Angra or the will of the holy grail. After learning of its true corrupted nature Kirisugu ordered saber to destroy it which confused her since he wanted the grail as badly as she did to save the world so saber felt betrayed by her master for forcefully ordering her to destroy it. Remember in Zero saber originally wanted the grail to redo her days as king but after seeing what has become of her knight Lancelot and reflecting her kingship which again you get to see in Garden of Avalon. She now wants the grail to redo the whole of selection. Which can effect her entire existence meaning she might be erased in the process.
