If Anakin is skilled enough to defeat arguably the greatest duelist in the Jedi order, then he would be perfect for being Palpatine's Apprentice. Dooku somewhat understands this and is actively trying to prove to Palpatine that Anakin is just a petulant child who isn't even worthy of the title. Dooku obviously doesn't want Anakin to succeed because that means he will be replaced. Replacement with Sith means death.
