This is something that happens with every seasonal series that gets translated from LN to anime. While Volumes are a thing on its own, seasonal anime adaptations feel the need to end their episode 12/13 on something big in their eyes which is not neccessarily every Volume. Thus rushing things happen.

2022-08-11 03:24:27 +0000 UTCI believe the end of the race was offscreen in the LN too. It's been a while for me so I might have remembered wrong. Also in your time ranting, you missed the actual explanation. So far despite things being sped up/cut, s2 is much more faithful to the LN than s1. I prefer unimportant things being cut over things being altered.
