Every single Demon was once a human. Tanjiro understands the significance of this more than most, since his sister became a demon and he lived to tell about it. Because of this, while he hasn't (as of episode 5, at least) shown any mercy to demons causing any harm, he's also sad for the demons. He hesitated to kill the demon near the shrine where he met Urokodaki (Notably Urokodaki mentioned he smelled kindness from Tanjiro during that hesitation.), and, while he didn't hesitate to kill the demon during Final Selection, it's obvious he was upset that the demon had had the misfortune of turning into a demon at all. It's an interesting combination of emotions.
