I can't remember if the showrunners ever said *when* he chose to become vulnerable around Chloe, as you said, he was unharmed when Jimmy shoots him after shooting Chloe in the pilot. I assumed it was the moment in his penthouse, in S01E04 Manly Whatnots, where Chloe sees him naked, he's showing off his body when she sees his back scars, and he's momentarily vulnerable with her. It's a beautifully touching scene - for me, it was the moment I realised this show had something special - and then he bleeds at the end of the episode, so it kinda just fits in my mind. I love how the writers put the onus on the individual through the idea of self-actualisation - humans and angels alike - and weaves it into the show's mythology.
