hope you're all safe. Getting lots of love from you for my latest video about German Ramen, thank you! Here's something that happened while I was researching this video.
I had this idea of making tri-colored noodles to resemble the German flag for the video. I needed yellow, red and black. Yellow in particular could be super useful for making regular ramen. Then it hit me: Turmeric!
I've had deep yellow turmeric stains on my hands many times, but now the intense color could actually come in useful. I dissolved a bit of turmeric in water and it turned super yellow. Success. So I mixed in a bit of turmeric in with the flour for my next batch of Ramen, expecting buttery yellow results. But as soon as the water-salt-soda mix hit the flour, disappointment kicked in: The noodles were RED!
I was baffled at first. But after doing some thinking and an experiment I can confirm: That super yellow turmeric turns red in an alkaline environment, which ramen will always bring with it!
I was so close to finding something great :) Anyway, if you need red-ish noodles, add a pinch of turmeric... ;) You can see the result in the photo above.
And by the way. See the not-so-black noodle? That's what happens if you don't use cuttlefish ink. All other black colorings I tried will wash out during cooking and usually turn grey or even a gross green color.
Just felt like sharing a little insight since there is a lot of stuff I am trying off camera which you don't get to see.
