Hey guys, I am so happy you enjoyed the special edition episode from Karelia! :) I promised to share my Mom's super delicious Karelian Kalitki recipe, here it is!

Method
First the filling: Boil and mash potatoes with a knob of butter, a splash of cream, a spoonful of sour cream, greens and salt + pepper to taste. You should be left with a thick paste.
For the dough: Mix both flours with salt, kefir and water and knead into a stiff dough. Traditionally, they're 100% rye - but adding a bit of wheat makes for a more tender result. Rest dough for at least 15 minutes.
Working in 2-3 batches, roll out the dough very thinly on a floured working surface and use a cookie cutter or bowl to cut out circular "tortillas", diameter around 10cm.
Spread a bit of mashed potato filling in the center of each "tortilla". There are countless methods of pleading the edges, check YouTube for that - my mom recommends to not worry too much about this :) As long as you rolled out your tortillas thinly, you will like what you get in the end.
Brush the filling of your pleaded kalitki with a sour-cream-and-egg mixture. Bake at 180C until golden brown, usually around 15 minutes. Right after taking them out of the oven, brush doughy sides with softened butter.
