My knock-off amba... 🤔

In my last video you might have noticed my "amba" recreation. I wanted to get some from the store, but it is really hard to find! So I had to improvise. 

Wikipedia says the following: 

Amba or anba (Arabic: عنبه ,عمبة, أمبة, همبة‎, Hebrew: עמבה‎) is a tangy mango pickle condiment popular in Indian and Middle Eastern cuisine (particularly Saudi, Iraqi, and Israeli cuisines). It is typically made of mangoes, vinegar, salt, mustard, turmeric, chili and fenugreek, similarly to savoury mango chutneys.

It came to Israel via the Jewish Iraqi population - who picked it up in India while on trade missions. Makes sense!

Here's what I had in the pantry and decided to try:

Gave everything a blitz in the food processor - it emulsified nicely! Had the fruity, tangy, spicy kick of amba. Texture was not like the original but quite pleasant. Gotta say this one is not a 1:1 substitute for the original but it's definitely quite good nonetheless!

I do want to make proper amba some time. Who's tried making amba before?
