Hello back Ruby, I got another recipe for you, it's not really healthy but it'a good for a Christmas treat, Chocolate sugar cookies, here goes......21/2 sticks unsalted butter at room temp, 2 cups of sugar, 2 large eggs, 1 teaspoon vanilla extract 3/4 cup of Dutch process cocoa powder, 2 cups flour, 1 teaspoon baking soda, 1/2 teaspoon salt. In a large bowl, add butter and sugar and cream together with a hand mixer, add eggs and vanilla to the mixture and mix until combined. In a medium bowl mix the coca powder, flour, baking soda and salt. Slowly add dry ingredients and continue mixing until well incorporated. Roll the dough into two logs that are about two inches high and one foot long (doesn't have to be exact) wrap them in wax paper (what I normally do is spread the dough on a sheet of wax paper then as I wrap it I make the log with my hands) refrig for 2 hrs. Preheat oven to 350 oven, slice chilled dough into half inch slices then roll into a ball in your hands, roll in sugar, place on parchment paper lined cookie sheet, leaving room for the cookies to spread, bake for 10 minutes.....bet you can't eat just one
