I notice you mention clean food a lot. But is it really that clean? Fresh yes but clean? Most of the waters in China are polluted to some degree and you cannot be sure the water is clean to clean the food, hence why the wok is used so much. The intense heat kills all the bacteria. But I do agree that the food is fresh and tasty (will not get me eating beef though as it disagrees with me) but the pork is the best.
