I love how you're doing multiple maps for the Collegium of Mystic Arts series! I'd love something like that for an Archfey's palace/court, with variations for the different seasons or fey courts (and maybe a Shadowfell variation?). Rooms like throne room, ballroom, dining room, sleeping chambers, guest quarters, gardens, etc. Somewhere the players can really explore and get wrapped up in fey political intrigue. Your spin on something like that would be beeeeautiful, and it would probably combine nicely with some of your existing maps!
