Thanks! The curd really makes a difference! (I’m usually more of a chocolate cake girlie myself, and I’m a much better cook than baker, but this is just such an easy crowd pleaser. And it looks nice, especially if you really pile on the berries (sorry, Ben 😂).

Not to toot my own horn (jk, TOOT TOOT), but I make a mean pavlova. Two layers of meringue (made with raspberry vinegar), lightly sweetened whipped cream, preferably homemade citrus curd of any kind (usually lemon/lime, grapefruit is also great) and lots of strawberries, raspberries and blueberries. Blackberries and red currants optional, but recommended. The curd is the real game changer here, it adds flavor and cuts the sweetness a little bit. Thanks for coming to my TED Talk.
