I'm sure a lot of the reason Zuko starts stealing is because he is used to living a rich lifestyle and not wanting for much, but I think a lot of it is also for his uncle's sake. Like yes, Iroh was fine with singing and dancing for his dinner, and called the guy who did that to him a "nice guy", but what that guy did was still degrading and cruel, and Zuko did not like that. That's why he's the first guy he goes after, to get back at him and also to take his dual swords. Then he continues to steal from others so that he or Iroh don't have to be humiliated begging for money anymore. It's not right or good, but it's better than him just doing it for himself
