Jalapeño Popper Chicken Taquitos

This is something I have wanted to make for a long time, I just wasn't sure what filling I wanted to go with. This chicken filling turned out SO good that I may have to make a pasta dish using a variation of it. So be on the lookout for that :)

As I mention in the video, there are no veggies in this dish, so if you want some fiber and micronutrients with these, add a side of veggies or a small side salad.

These are delicious. I added half a can of chopped up San Marcos (pickled) jalapeños. It added 35 calories to the whole batch. This is gonna be a regular for me. Chef’s kiss! Oh! And for people having trouble finding the Greek cream cheese, if you live in an area with a substantial middle eastern population, I think it is the same thing as labne.

Do they thaw/reheat well?

These were sooooo good! One of the first lunch meals I made and my husband loved them! Win in our books. I dipped mine in plain greek yogurt to up the protein a tad rather than dip in sour cream. My husband dipped his in ranch dressing.

Late tip; if you make them again, use toothpicks to hold them together

Thank you! Despite the cracking they hold together well while eating so it wasn’t too big a deal. So filling and packed with flavor. 10/10

This happens a lot with corn tortillas. If you make them again and you can find a flour tortilla that you like, you probably won't have that issue. This happened to a few of mine as well.

Rolling them went fine but then they busted open while baking…any tips?

I suggest cutting the stem off the jalapeno, cut it in half length-wise, clean out the membrane and seeds, then soak covered in milk for 15 minutes... this takes the heat out of the jalapenos but leaves the flavor. Even my preschooler will eat them this way and he doesn't like spicy food at all.

Bell peppers would work.

Yes but I wouldn't use red ones, since they are a little sweeter than green ones.

I am not into spicy but want to try this. Do you think bell pepper would work?

What can I substitute for Jalapeños, I love taquitos but I don’t like things super hot

The teen boys love this one so much I have to double the recipe and freeze!

Warming them up in the microwave will help prevent this.

These are SO good! I did half in corn tortillas and half in low carb flour tortillas, they're both awesome!

I have made this twice! It’s amazing. I may have added a little bit of shredded Mexican cheese. Delish!!!!

Did you warm them up between 2 damp paper towels before stuffing and rolling?

My corn tortillas all fell apart as I was making these anytime have similar issues?

These were BOMB for my lunches this week!

Ohhhh you could slap some enchiladas sauce and cheese on top!! Yummy
